Quinoa Pumpkin Protein Pancakes
Ingredients
- 1/3 cup quinoa flour
- 1 egg
- 1/3 cup pumpkin purée
- 1 tsp Maca powder
- 1 scoop pumpkin slice latte protein powder
- Cashew milk to desired consistency
- 1/2 tsp baking powder
- Cinnamon
Toppings
- Raspberries
- Blueberries
- Almond butter
- Chia seeds
- Toasted coconut flakes
- Sugar-free pancake syrup
Preparation
Mix dry ingredients together in a bowl
In a separate bowl, mix wet ingredients including egg and pumpkin purée
Combine wet and dry mixtures, adding cashew milk gradually to achieve pancake batter consistency
Heat a non-stick skillet or griddle over medium heat
Pour batter onto the heated surface to form pancakes and cook until bubbles appear on the surface
Flip the pancakes and cook the other side until golden brown
Remove from heat and add desired toppings before serving
