Chocolate Pumpkin Cauliflower Pancakes

Ingredients

  • 1 egg
  • 1/3c organic buckwheat flour
  • 2T coconut flour
  • 1/4c pumpkin purée
  • 1 scoop @pescience vegan chocolate bliss protein powder
  • 1c water or cashew milk
  • 1/2c riced cauliflower
  • 1/2tsp baking powder
  • Cinnamon

Preparation

  1. If you used frozen riced cauliflower, steam it in the microwave for about 60-90 seconds before putting it in the blender.

  2. Add all of the ingredients to your blender and mix until it reaches your desired pancake consistency.

  3. Cook the mixture to make pancakes and enjoy.

  4. Top with optional toppings such as almond butter, strawberries, and Walden Farms sugar-free pancake syrup.
