Protein Pumpkin Chocolate Banana Nut Pancakes
Ingredients
- 1 egg
- 1/3 cup quinoa flour
- 2 tablespoons coconut flour
- 1/3 cup pumpkin purée
- 1 serving chocolate banana nut protein powder
- Water (3/4 to 1 cup)
- 1/2 teaspoon baking powder
- Cinnamon

- Almond butter
- Raspberries
- Vegan homemade cookie dough
- Sugar-free pancake syrup
Preparation
In a bowl, mix dry ingredients together: quinoa flour, coconut flour, baking powder, cinnamon, and protein powder.
In another bowl, combine wet ingredients: egg, pumpkin purée, and water until smooth and desired consistency is reached.
Blend wet and dry mixtures thoroughly to form a batter.
Heat a non-stick pan or griddle over medium heat.
Pour batter onto the pan to create pancakes; cook until bubbles appear, then flip and cook the other side until golden.
Top the cooked pancakes with almond butter, raspberries, vegan homemade cookie dough, and sugar-free pancake syrup before serving.
