Protein Pumpkin Chocolate Banana Nut Pancakes

Ingredients

  • 1 egg
  • 1/3 cup quinoa flour
  • 2 tablespoons coconut flour
  • 1/3 cup pumpkin purée
  • 1 serving chocolate banana nut protein powder
  • Water (3/4 to 1 cup)
  • 1/2 teaspoon baking powder
  • Cinnamon

  • Raspberries
  • Vegan homemade cookie dough
  • Sugar-free pancake syrup

Preparation

  1. In a bowl, mix dry ingredients together: quinoa flour, coconut flour, baking powder, cinnamon, and protein powder.

  2. In another bowl, combine wet ingredients: egg, pumpkin purée, and water until smooth and desired consistency is reached.

  3. Blend wet and dry mixtures thoroughly to form a batter.

  4. Heat a non-stick pan or griddle over medium heat.

  5. Pour batter onto the pan to create pancakes; cook until bubbles appear, then flip and cook the other side until golden.

  6. Top the cooked pancakes with almond butter, raspberries, vegan homemade cookie dough, and sugar-free pancake syrup before serving.
