Healthy Protein Pumpkin Pancakes
Ingredients
- 1/3 cup quinoa flour
- 1 egg
- 1/4 cup pumpkin purée
- 1/4 grated zucchini
- 1 tsp maca powder
- 1 scoop pumpkin slice latte protein powder
- Water as needed
- 1/2 tsp baking powder
- Cinnamon to taste
Toppings
- Raspberries
- Blueberries
- Almond butter
- Sugar-free pancake syrup
Preparation
Combine dry ingredients in a bowl
Mix wet ingredients in another bowl
Add wet mixture to dry mixture and stir in water to achieve desired consistency
Heat a skillet over medium heat
Pour batter onto skillet and cook until bubbles form, then flip and cook the other side until golden brown
Serve with toppings
