Healthy Protein Pumpkin Pancakes

Ingredients

  • 1/3 cup quinoa flour
  • 1 egg
  • 1/4 cup pumpkin purée
  • 1/4 grated zucchini
  • 1 tsp maca powder
  • 1 scoop pumpkin slice latte protein powder
  • Water as needed
  • 1/2 tsp baking powder
  • Cinnamon to taste

Toppings

  • Raspberries
  • Blueberries
  • Almond butter
  • Sugar-free pancake syrup

Preparation

  1. Combine dry ingredients in a bowl

  2. Mix wet ingredients in another bowl

  3. Add wet mixture to dry mixture and stir in water to achieve desired consistency

  4. Heat a skillet over medium heat

  5. Pour batter onto skillet and cook until bubbles form, then flip and cook the other side until golden brown

  6. Serve with toppings
