Vegan Berry Pancakes with Protein Powder
Ingredients
- 1/4 cup organic buckwheat flour
- 2 tablespoons coconut flour
- 1/4 cup egg whites
- 1/4 grated zucchini (optional)
- 1/2 serving wild berry vegan protein powder
- Water as needed for consistency
- 1/2 teaspoon baking powder
Add-ins
- A few blueberries per pancake
Toppings
- Strawberries
- Raspberries
- Blueberries
- Sugar-free pancake syrup
Preparation
In a bowl, combine dry ingredients: buckwheat flour, coconut flour, baking powder, and protein powder
In another bowl, mix wet ingredients: egg whites and grated zucchini if using
Combine wet and dry mixtures, add water gradually to achieve pancake batter consistency
Heat a non-stick pan or griddle over medium heat
Pour batter onto the pan, add a few blueberries to each pancake, and cook until bubbles form on the surface
Flip the pancake and cook the other side until golden brown
Serve with toppings: strawberries, raspberries, blueberries, and sugar-free syrup
