Vegan Berry Pancakes with Protein Powder

Ingredients

  • 1/4 cup organic buckwheat flour
  • 2 tablespoons coconut flour
  • 1/4 cup egg whites
  • 1/4 grated zucchini (optional)
  • 1/2 serving wild berry vegan protein powder
  • Water as needed for consistency
  • 1/2 teaspoon baking powder

  • A few blueberries per pancake

Toppings

  • Strawberries
  • Raspberries
  • Blueberries
  • Sugar-free pancake syrup

Preparation

  1. In a bowl, combine dry ingredients: buckwheat flour, coconut flour, baking powder, and protein powder

  2. In another bowl, mix wet ingredients: egg whites and grated zucchini if using

  3. Combine wet and dry mixtures, add water gradually to achieve pancake batter consistency

  4. Heat a non-stick pan or griddle over medium heat

  5. Pour batter onto the pan, add a few blueberries to each pancake, and cook until bubbles form on the surface

  6. Flip the pancake and cook the other side until golden brown

  7. Serve with toppings: strawberries, raspberries, blueberries, and sugar-free syrup
