Paleo Banana Maple Protein Pancakes

Ingredients

  • 1/4 cup birchbenders paleo pancake mix
  • 1/3 cup organic buckwheat flour
  • 1 scoop high performance nutrition vegan banana maple french toast protein powder
  • 1 small zucchini (grated)
  • 1/2 teaspoon baking powder
  • 1 cup water or plant milk

Toppings

  • strawberries
  • blueberries
  • trader joes raw creamy almond butter
  • cacao nibs
  • coconut flakes

Preparation

  1. Mix all dry ingredients together in a bowl

  2. Grate the zucchini if not already done and add it along with the wet ingredients to form a batter

  3. Heat a non-stick pan or griddle over medium heat and lightly grease it with oil or butter

  4. Pour portions of the batter onto the pan to form pancakes and cook until bubbles appear on the surface and edges look set

  5. Flip the pancakes and cook the other side until golden brown

  6. Remove from heat and serve with the prepared toppings
