Fluffy Paleo Pumpkin Spice Pancakes

Ingredients

  • 1/4 cup birchbenders paleo pancake mix
  • 1/4 cup organic buckwheat flour
  • 1/4 cup egg whites
  • 1 scoop highperformancenutrition vegan pumpkin spice latte protein powder
  • 1/4 cup pumpkin purée
  • 1/2 teaspoon baking powder
  • Cinnamon
  • Water to consistency, about 1/2 cup

Toppings

  • Blueberries
  • Raspberries
  • Almond cashew super-butter
  • Walden farms sugarfree pancake syrup

Preparation

  1. Mix all ingredients together to form a batter

  2. Refrigerate the batter for 5 minutes to let it set.

  3. Cook the batter on a hot griddle or pan until golden brown on both sides

  4. Add blueberries during cooking if desired, and top with raspberries, almond cashew super-butter, and sugarfree pancake syrup.
