Pumpkin Spice Waffles with Toppings

Ingredients

  • 1/4c organic buckwheat flour
  • 1/4c @bobsredmill paleo flour
  • 1/4c pumpkin purée
  • 1/4c egg whites
  • 1 scoop of @highperformancenutrition #vegan pumpkin spice latte protein powder
  • 1/2tsp baking powder
  • Cinnamon
  • Cashew milk to consistency (~3/4c)

Toppings

  • Blueberries
  • Almond butter
  • @waldenfarmsinternational #sugarfree pancake syrup

Preparation

  1. Combine all batter ingredients in a bowl and mix until smooth

  2. Refrigerate the batter for 5 minutes

  3. Heat waffle iron to appropriate temperature

  4. Pour batter into waffle iron and cook until golden and fluffy

  5. Top with blueberries, almond butter, and sugar-free pancake syrup
