Cookies and Cream Protein Pancakes with Chocolate Drizzle
Ingredients
- 1 scoop cookies and cream protein powder
- 1/4 cup organic buckwheat flour
- 1/4 cup paleo pancake mix
- 1/4 cup egg whites
- 1/2 cup water
- 1/2 teaspoon baking powder
- 2 tablespoons cacao powder
- extra water as needed
- 1/3 cup pumpkin purée (optional)
Preparation
Make the batter by combining 1 scoop of cookies and cream protein powder, 1/4 cup organic buckwheat flour, 1/4 cup paleo pancake mix, 1/4 cup egg whites, 1/2 cup water, and 1/2 teaspoon baking powder.
Pour one-quarter of the mixture into a separate bowl and add 2 tablespoons of cacao powder plus extra water to achieve the right pancake consistency.
Optionally, add 1/3 cup pumpkin purée to the main batter to make it lighter.
Pour the main pancake mixture onto the pan first, then drizzle the chocolate mixture on top.
Add your desired topping and enjoy.
