Pumpkin Protein Pancakes Stack
Ingredients
- 1/4 cup organic buckwheat flour
- 1/4 cup @bobsredmill paleo pancake and waffle mix
- 1/4 cup pumpkin purée
- 1/4 cup egg whites
- 1 scoop of @highperformancenutrition #vegan pumpkin spice latte protein powder
- 1/2 teaspoon baking powder
- Water to desired consistency
Toppings
- @traderjoes creamy raw almond butter
- @onedegreeorganics #vegan brown rice cacao crisps
- Chocolate coated crunch @squareorganics bar
Preparation
Mix all ingredients together to form a smooth batter
Heat a non-stick skillet or griddle over medium heat and lightly grease if necessary
Pour portions of batter onto the skillet and cook until bubbles form on the surface, then flip and cook the other side until golden brown
Remove from heat and top with the prepared toppings
