Gluten Free Vegan Oil Free Pumpkin Bread

Ingredients

  • 1 3/4 cups gluten free flour (we used @bobsredmill )
  • 2 cups pumpkin puree (or 1 whole can of pumpkin puree)
  • 2/3 cup coconut sugar (or 20 drops of stevia or half cup of maple syrup)
  • 2 tsp baking powder
  • 1.5 tsp xanthan gum
  • 1 tsp Ceylon cinnamon
  • 1/2 tsp Himalayan salt
  • 1/4 tsp baking soda
  • OPTIONAL: add 1/2 cup of chopped walnuts

Preparation

  1. Preheat oven to 350 F

  2. Combine all ingredients – don't over stir.

  3. Pour into loaf tin (lightly grease tin to ensure easy removal after baking)

  4. Bake for 50 – 60 minutes – insert toothpick into center – if its clean – its ready!
