Gluten Free Vegan Oil Free Pumpkin Bread
Ingredients
- 1 3/4 cups gluten free flour (we used @bobsredmill )
- 2 cups pumpkin puree (or 1 whole can of pumpkin puree)
- 2/3 cup coconut sugar (or 20 drops of stevia or half cup of maple syrup)
- 2 tsp baking powder
- 1.5 tsp xanthan gum
- 1 tsp Ceylon cinnamon
- 1/2 tsp Himalayan salt
- 1/4 tsp baking soda
- OPTIONAL: add 1/2 cup of chopped walnuts
Preparation
Preheat oven to 350 F
Combine all ingredients – don't over stir.
Pour into loaf tin (lightly grease tin to ensure easy removal after baking)
Bake for 50 – 60 minutes – insert toothpick into center – if its clean – its ready!
