Vegan Pumpkin Spice Muffins
Ingredients
Dry mix
- 2 cups all-purpose flour
- 1 cup coconut sugar or regular sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon spices
- 1/2 teaspoon sea salt
- 1/2 teaspoon cardamom
Wet mix
- 1 cup pumpkin puree
- 1/2 cup non-dairy milk (almond milk used)
- 1/3 cup applesauce
- 2 tablespoons maple syrup
- 2 teaspoons vanilla extract
Preparation
Preheat oven to 200 degrees Celsius.
Grease the baking pan.
In a large bowl, combine all dry ingredients and mix until uniform.
In a separate small bowl, mix all wet ingredients together.
Add wet ingredients to dry ingredients.
The mixture will be thick. Pour into baking molds and fill almost to the top.
Bake for 17-19 minutes or until golden.
