Pumpkin Spice Protein Waffles

Ingredients

  • 1/2 scoop protein powder
  • 1/2 banana
  • 1/3 cup oats (ground into flour)
  • 1 flax egg
  • 1/3 cup pumpkin purée
  • Cinnamon/pumpkin pie spice to taste
  • Water (to desired consistency)

Optional

  • Vegan chocolate chips

Preparation

  1. Grind the oats into flour.

  2. Prepare the flax egg by mixing ground flaxseed with water and letting it sit for a few minutes to thicken.

  3. In a mixing bowl, combine the protein powder, mashed banana, pumpkin purée, cinnamon or pumpkin pie spice, and the flax egg.

  4. Add the ground oat flour and stir until well combined.

  5. Gradually add water to achieve the desired batter consistency.

  6. Preheat the waffle maker.

  7. Pour the batter into the preheated waffle maker and cook until golden and crisp.

  8. If using optional chocolate chips, fold them into the batter before cooking.
