Fluffy and Delicious Paleo Pancakes

Ingredients

  • 1/4c of birchbenders paleo pancake mix
  • 1/4c organic buckwheat flour
  • 1 scoop of highperformancenutrition vegan cinnamon bun protein powder
  • 2 egg whites
  • 1/2c pumpkin purée
  • 1/2tsp baking powder
  • Cinnamon
  • Water to consistency (~1/2c)

Toppings

  • almond butter
  • vegan dangfoods salted cacao toasted coconut chips
  • waldenfarms international sugarfree pancake syrup

Preparation

  1. Mix all ingredients together to form a batter

  2. Adjust consistency with water as needed

  3. Refrigerate the batter for 5 minutes to let it set.

  4. Cook the batter on a preheated griddle or pan until golden brown on both sides

  5. Serve with the prepared toppings
