Buckwheat Coconut Flour Protein Pancakes
Ingredients
- 1/4c organic buckwheat flour
- 1.5T of coconut flour
- 1 egg
- 1 scoop of @highperformancenutrition #vegan cinnamon bun protein powder
- 1/4c pumpkin purée
- 1/2tsp baking powder
- Cinnamon
- Water to consistency
Toppings
- almond butter
- #vegan @dangfoods salted cacao toasted coconut chips
- chocolate coated coconut @squareorganics bar
- @waldenfarmsinternational #sugarfree pancake syrup
Preparation
Mix all dry ingredients together in a bowl
Add wet ingredients and water until desired batter consistency is reached
Heat a griddle or non-stick pan over medium heat and lightly grease if needed
Pour batter onto the griddle to form pancakes and cook until bubbles form and edges set, then flip and cook until golden brown
