Best Paleo Protein Pancakes
Ingredients
- 1 serving birchbenders paleo pancake mix
- 1 scoop highperformancenutrition vegan cinnamon bun protein powder
- 2 egg whites
- 1/3 cup pumpkin purée
- 1/2 teaspoon baking powder
- cinnamon
- water (about 1/2 to 3/4 cup)
Toppings
- almond butter

Preparation
In a bowl, mix the dry ingredients: pancake mix, protein powder, baking powder, and cinnamon
In a separate bowl, beat the egg whites until frothy
Combine the egg whites, pumpkin purée, and water with the dry mixture to achieve the desired consistency
Heat a non-stick pan or griddle over medium heat
Pour the batter onto the pan and cook until bubbles form on the surface, then flip and cook until golden brown
Serve the pancakes with the toppings: almond butter, chopped chocolate coated almond bar, salted cacao coconut chips, and sugar-free pancake syrup
