Fluffy Paleo Buckwheat Pancakes
Ingredients
- 1/4c organic buckwheat flour
- 1/4c of @birchbenders #paleo pancake mix
- 1 scoop of @highperformancenutrition #vegan cinnamon bun protein powder
- 2 egg whites
- 1/3c pumpkin purée
- 1/2tsp baking powder
- Cinnamon
- Water to consistency (~1/2c)
Toppings
- almond butter
- #vegan @dangfoods salted cacao toasted coconut chips
- @purely_elizabeth chocolate sea salt granola
- @waldenfarmsinternational #sugarfree pancake syrup
Preparation
In a mixing bowl, combine all dry ingredients: buckwheat flour, paleo pancake mix, protein powder, baking powder, and cinnamon
Add wet ingredients: egg whites, pumpkin purée, and water to reach desired consistency. Mix until smooth
Heat a non-stick skillet or griddle over medium heat
Pour batter onto the skillet to form pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown
Remove from heat and serve with toppings
