Pumpkin Spice Macro-Friendly Pancakes

Ingredients

  • 1 serving birchbenders paleo pancake mix
  • 1 scoop high performance nutrition vegan pumpkin spice latte protein powder
  • 2 egg whites
  • 1/3 cup plus 2 tablespoons pumpkin purée
  • 1/2 teaspoon baking powder
  • Cinnamon, to taste
  • Water, as needed

Toppings

  • Blueberries
  • Toasted coconut flakes
  • Sugar-free pancake syrup

Preparation

  1. Beat the egg whites until frothy.

  2. Mix all ingredients together to form a batter of desired consistency.

  3. Heat a non-stick pan or griddle over medium heat.

  4. Pour batter onto the pan to make pancakes and cook until bubbles form and edges are set, then flip and cook the other side until golden.

  5. Heat the blueberries until warm.

  6. Serve the pancakes with heated blueberries, toasted coconut flakes, and sugar-free pancake syrup.
