Protein Vanilla Pumpkin Coconut Waffles

Ingredients

  • 1/4c arrowheadmills organic buckwheat flour
  • 1/5c bobsredmill paleo flour
  • 1/4c libbyspumpkin pumpkin purée
  • 1/4c egg whites
  • 1/2 scoop of highperformancenutrition vegan pumpkin spice latte protein powder
  • 1 scoop vitalproteins coconut vanilla collagen beauty greens powder
  • 1 scoop majusuperfoods mental mushrooms
  • Cinnamon
  • 1/2tsp baking powder
  • Water to consistency (~3/4c)

Toppings

  • Strawberries
  • Blueberries
  • @wild_friends almond-cashew superbutter

Preparation

  1. Mix all ingredients together to form a batter.

  2. Refrigerate the batter for 5 minutes to let it set.

  3. Cook the batter in a waffle iron until golden brown.
