Gluten-Free Oat Banana Pancakes with Fruit
Ingredients
- 1/2 cup gluten-free oats
- 1/2 banana
- 1 egg or 1 tablespoon ground flaxseeds mixed with 3 tablespoons water
- Cinnamon to taste
- Vanilla to taste
Toppings
- Strawberries
- Blueberries
- Blackberries
- Mango
- Pecans
- Coconut flakes
- Raw agave
Preparation
Mash banana and mix with oats, egg (or substitute), cinnamon, and vanilla to form batter
Heat a pan over medium heat and cook small pancakes until golden brown on both sides
Stack pancakes with a layer of fruit toppings between each one
