Gluten-Free Oat Banana Pancakes with Fruit

Ingredients

  • 1/2 cup gluten-free oats
  • 1/2 banana
  • 1 egg or 1 tablespoon ground flaxseeds mixed with 3 tablespoons water
  • Cinnamon to taste
  • Vanilla to taste

Toppings

  • Strawberries
  • Blueberries
  • Blackberries
  • Mango
  • Pecans
  • Coconut flakes
  • Raw agave

Preparation

  1. Mash banana and mix with oats, egg (or substitute), cinnamon, and vanilla to form batter

  2. Heat a pan over medium heat and cook small pancakes until golden brown on both sides

  3. Stack pancakes with a layer of fruit toppings between each one
