Fluffy Almond Flour Banana Pancakes
Ingredients
- 3 eggs
- 1 mashed banana
- 1 1/2 cups almond flour
- 1 1/2 tsp baking powder
- 1 tsp vanilla
- 1 tsp cinnamon
Toppings
- blueberries
- plain Kefir
- banana
Preparation
Mash the banana in a bowl
Mix the mashed banana with eggs, vanilla, and cinnamon until well combined
In a separate bowl, combine almond flour and baking powder
Add the dry ingredients to the wet ingredients and stir to form a batter
Heat a non-stick pan or griddle over medium heat and lightly grease if necessary
Spoon batter onto the pan to form small pancakes and cook until bubbles form on the surface, then flip and cook until golden brown
Warm blueberries in a small pan or microwave until soft
Serve pancakes topped with warmed blueberries, Kefir, and additional banana slices
