Vegan Protein Pumpkin Waffles
Ingredients
- 1/4c arrowheadmills organic buckwheat flour
- 1/5c bobsredmill paleo flour
- 1/4c libbyspumpkin pumpkin purée
- 1T flax seeds
- 3/4 scoop of highperformancenutrition vegan pumpkin spice latte protein powder
- 1 scoop majusuperfoods mental mushrooms
- Cinnamon
- 1/2tsp baking powder
- Water to consistency (~3/4c)
Toppings
- Strawberries
- Raspberries
- Almond butter
Preparation
Combine all dry ingredients in a bowl.
Add wet ingredients and mix to form a batter.
Add water gradually to achieve the desired consistency.
Refrigerate the batter for 5 minutes to let it set.
Preheat the waffle iron.
Pour the batter onto the preheated waffle iron and cook until golden brown.
