Vegan Protein Pumpkin Waffles

Ingredients

  • 1/4c arrowheadmills organic buckwheat flour
  • 1/5c bobsredmill paleo flour
  • 1/4c libbyspumpkin pumpkin purée
  • 1T flax seeds
  • 3/4 scoop of highperformancenutrition vegan pumpkin spice latte protein powder
  • 1 scoop majusuperfoods mental mushrooms
  • Cinnamon
  • 1/2tsp baking powder
  • Water to consistency (~3/4c)

Toppings

  • Strawberries
  • Raspberries
  • Almond butter

Preparation

  1. Combine all dry ingredients in a bowl.

  2. Add wet ingredients and mix to form a batter.

  3. Add water gradually to achieve the desired consistency.

  4. Refrigerate the batter for 5 minutes to let it set.

  5. Preheat the waffle iron.

  6. Pour the batter onto the preheated waffle iron and cook until golden brown.
