Vegan Cinnamon Apple Protein Waffles

Ingredients

  • 2/3 cup spelt flour
  • 1 banana
  • 2 tablespoons ground flax seeds
  • 2 scoops vegan cinnamon bun protein powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 2 cups liquid (such as almond milk and water)

Toppings

  • 3 mini gala apples
  • Cinnamon (to taste)
  • 2 tablespoons maple syrup
  • Almond butter
  • Vegan chocolate chips

Preparation

  1. Mash the banana in a bowl, then add the almond milk and ground flax seeds.

  2. Next, add the flour, protein powder, baking powder, and cinnamon.

  3. Add the extra cup of liquid as needed while stirring in the dry ingredients.

  4. Add the mixture to a waffle iron and cook for 3-5 minutes.

  5. While the waffles are cooking, prepare the apples: cut up 3 mini gala apples and toss them in a bowl with cinnamon and 2 tablespoons of maple syrup.

  6. Top the waffles with almond butter and vegan chocolate chips.
