Vegan Banana Pancakes with Chia Jam

Ingredients

  • 1 banana (mashed)
  • 1 tablespoon ground flaxseed meal
  • 1/2 cup oat flour
  • 1-2 scoops vegan cinnamon bun protein powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • ~2 cups almond milk (or water)
  • coconut flakes (for topping)
  • maple syrup (for topping)

Chia jam components

  • 3/4 cup frozen mixed berries
  • 2 tablespoons water
  • 1.5 tablespoons chia seeds

Preparation

  1. Place 3/4 cup frozen mixed berries in a small saucer and heat for 5 minutes with 2 tablespoons of water.

  2. Mash the berries with a fork.

  3. Add 1.5 tablespoons of chia seeds, mix everything together, and keep on a low heat for 5 more minutes.

  4. Mash the banana.

  5. Combine all dry pancake ingredients in a bowl.

  6. Add the wet ingredients to the dry mixture and stir to form a batter.

  7. Heat a non-stick skillet over medium heat.

  8. Pour batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.

  9. Serve pancakes topped with the prepared chia jam, coconut flakes, and maple syrup.
