Vegan Pumpkin Protein Zoats
Ingredients
- 2/3 cup oats
- 1 1/4 cups water or cashew milk
- 1/2 zucchini, grated
- 2 heaping spoonfuls pumpkin purée
- 1/2 scoop vegan pumpkin spice latte protein powder
Toppings
- hemp seeds
- shredded coconut flakes
- chocolate coated nuts and sea salt bar
- almond butter
Preparation
Grate the zucchini if not already done
In a saucepan, combine oats, water or cashew milk, grated zucchini, pumpkin purée, and protein powder
Cook over medium heat, stirring occasionally, until the mixture is thickened and oats are cooked, about 5-10 minutes
Top with hemp seeds, shredded coconut flakes, chocolate coated nuts and sea salt bar, and almond butter
