Vegan Pumpkin Protein Zoats

Ingredients

  • 2/3 cup oats
  • 1 1/4 cups water or cashew milk
  • 1/2 zucchini, grated
  • 2 heaping spoonfuls pumpkin purée
  • 1/2 scoop vegan pumpkin spice latte protein powder

Toppings

  • hemp seeds
  • shredded coconut flakes
  • chocolate coated nuts and sea salt bar
  • almond butter

Preparation

  1. Grate the zucchini if not already done

  2. In a saucepan, combine oats, water or cashew milk, grated zucchini, pumpkin purée, and protein powder

  3. Cook over medium heat, stirring occasionally, until the mixture is thickened and oats are cooked, about 5-10 minutes

  4. Top with hemp seeds, shredded coconut flakes, chocolate coated nuts and sea salt bar, and almond butter
