Vegan Protein Zoats Breakfast Bowl

Ingredients

  • 1/2 cup oats
  • 1 1/3 cups water or plant milk
  • optional: 1/2 cup riced cauliflower
  • 1/2 zucchini
  • 1 scoop vegan protein powder
  • almond butter
  • Puffins cereal
  • vegan chocolate chips

Preparation

  1. Add 1/2 cup oats, 1 1/3 cups water or plant milk, and optional 1/2 cup riced cauliflower into a pot and heat on medium heat.

  2. While that begins to cook, grate 1/2 of a zucchini into a separate bowl.

  3. Once the oats, riced cauliflower, and water come to a boil, add the grated zucchini.

  4. Turn the heat to low and add 1 scoop of vegan protein powder.

  5. Stuff the mixture into an almost empty jar of almond butter and top with Puffins cereal and vegan chocolate chips.
