Vegan Protein Zoats Breakfast Bowl

Ingredients

  • 1/2 cup riced cauliflower (frozen)
  • 1/2 cup oats
  • 1 1/3 cups water or plant milk
  • 1/2 zucchini
  • 1 scoop Planta vegan peanut butter cup protein powder

Toppings

  • raw creamy almond butter
  • vegan dark chocolate espresso square
  • vegan or paleo granola

Preparation

  1. Add approximately 1/2 cup riced cauliflower (frozen) into your pot with 1/2 cup oats and approximately 1 1/3 cups water or plant milk to heat on the stove over low to medium heat.

  2. While that begins to cook, grate 1/2 of a zucchini into a separate bowl to add later.

  3. Once the oats, riced cauliflower, and liquid come to a boil, add the grated zucchini; if the mixture is too dry, add more liquid.

  4. Turn the heat to low and add 1 scoop of Planta vegan peanut butter cup protein powder.

  5. Add your toppings: raw creamy almond butter, vegan dark chocolate espresso square, and vegan or paleo granola.
