Vegan Protein Pumpkin Zoats Breakfast

Ingredients

  • 1/2 cup oats
  • 1/2 cup grated cauliflower
  • 1 1/3 cup water or plant milk
  • 1 small zucchini
  • 1 scoop of vegan peanut butter protein powder
  • Heaping spoonful of pumpkin purée

Toppings

  • Mini vegan chocolate chips
  • Strawberries
  • Paleo vegan granola

Preparation

  1. Add 1/2 cup oats, 1/2 cup grated cauliflower, and 1 1/3 cup water or plant milk to a pot on the stove over medium heat

  2. While the mixture begins to cook, grate a small zucchini into a separate bowl

  3. Once the oats come to a boil, add the grated zucchini

  4. Turn the heat to low and add 1 scoop of vegan peanut butter protein powder

  5. Add a heaping spoonful of pumpkin purée to add extra pumpkin flavor and thicken the oats

  6. Stuff the oats mixture into an almost empty jar of raw creamy almond butter and top with mini vegan chocolate chips, strawberries, and paleo vegan granola
