Vegan Pumpkin Protein Zoats Breakfast
Ingredients
- 1/2 cup oats
- 1/2 cup grated cauliflower
- 1 1/3 cups water or plant milk
- 1 small zucchini
- 1 scoop Planta vegan peanut butter protein powder
- Heaping spoonful pumpkin purée
Toppings
- Mini vegan chocolate chips
- Vegan paleo granola
Preparation
Add 1/2 cup oats, 1/2 cup grated cauliflower, and 1 1/3 cups water or plant milk to the stove on medium heat.
While that begins to cook, grate a small zucchini into a separate bowl.
Once the oats come to a boil, add the grated zucchini.
Turn the heat to low and add 1 scoop of Planta vegan peanut butter protein powder.
Add a heaping spoonful of pumpkin purée.
Stuff the mixture into an almost empty jar of Trader Joe's raw creamy almond butter and top with mini vegan chocolate chips and vegan paleo granola.
