Peanut Butter Cup Protein Oats with Almond Butter Topping

Ingredients

  • 1/2 cup oats
  • 1/2 cup grated cauliflower
  • 1 1/3 cup water or plant milk
  • 1 small zucchini
  • 1 scoop vegan peanut butter cup protein powder
  • almond butter (from jar)
  • oatmeal cookie dough chocolate square
  • extra almond butter or nut butter

Preparation

  1. Add 1/2 cup oats, 1/2 cup grated cauliflower, and 1 1/3 cup water or plant milk to the stove on medium heat.

  2. While that begins to cook, grate a small zucchini into a separate bowl.

  3. Once the oats come to a boil, add the grated zucchini.

  4. Turn the heat to low and add 1 scoop of vegan peanut butter cup protein powder.

  5. Stuff the oats into an almost empty jar of almond butter; top with oatmeal cookie dough chocolate square and extra nut butter.
