Peanut Butter Cup Protein Oats with Almond Butter Topping
Ingredients
- 1/2 cup oats
- 1/2 cup grated cauliflower
- 1 1/3 cup water or plant milk
- 1 small zucchini
- 1 scoop vegan peanut butter cup protein powder
- almond butter (from jar)
- oatmeal cookie dough chocolate square
- extra almond butter or nut butter
Preparation
Add 1/2 cup oats, 1/2 cup grated cauliflower, and 1 1/3 cup water or plant milk to the stove on medium heat.
While that begins to cook, grate a small zucchini into a separate bowl.
Once the oats come to a boil, add the grated zucchini.
Turn the heat to low and add 1 scoop of vegan peanut butter cup protein powder.
Stuff the oats into an almost empty jar of almond butter; top with oatmeal cookie dough chocolate square and extra nut butter.
