Vegan Peanut Butter Cup Protein Zoats
Ingredients
- 1/2 cup oats
- 1/2 cup riced cauliflower
- 1 1/3 cup water or plant milk
- 1 small zucchini
- 1 scoop Planta vegan peanut butter protein powder
- remaining almond butter from jar
Toppings
- mini vegan chocolate chips
- sprinkle of paleo vegan granola
- fresh berries
Preparation
Add 1/2 cup oats, 1/2 cup riced cauliflower, and 1 1/3 cup water or plant milk to the stove on medium heat.
While that begins to cook, grate a small zucchini into a separate bowl.
Once the oats come to a boil, add the grated zucchini.
Turn the heat to low and add 1 scoop of Planta vegan peanut butter protein powder.
Stuff the oats mixture into an almost empty jar of almond butter and top with mini vegan chocolate chips, a sprinkle of paleo vegan granola, and fresh berries.
