Vegan Peanut Butter Cup Protein Zoats

Ingredients

  • 1/2 cup oats
  • 1/2 cup riced cauliflower
  • 1 1/3 cup water or plant milk
  • 1 small zucchini
  • 1 scoop Planta vegan peanut butter protein powder
  • remaining almond butter from jar

Toppings

  • mini vegan chocolate chips
  • sprinkle of paleo vegan granola
  • fresh berries

Preparation

  1. Add 1/2 cup oats, 1/2 cup riced cauliflower, and 1 1/3 cup water or plant milk to the stove on medium heat.

  2. While that begins to cook, grate a small zucchini into a separate bowl.

  3. Once the oats come to a boil, add the grated zucchini.

  4. Turn the heat to low and add 1 scoop of Planta vegan peanut butter protein powder.

  5. Stuff the oats mixture into an almost empty jar of almond butter and top with mini vegan chocolate chips, a sprinkle of paleo vegan granola, and fresh berries.
