Vegan Protein Zoats with Raspberries and Almond Butter

Ingredients

  • 1/2 cup riced cauliflower
  • 1/2 to 2/3 cup oats
  • 1 1/3 cup water or plant milk
  • 1/2 zucchini
  • 1 scoop vegan banana maple protein powder
  • raw creamy almond butter
  • raspberries

Preparation

  1. Add 1/2 cup riced cauliflower, 1/2 to 2/3 cup oats, and 1 1/3 cup water or plant milk to a pot and heat on low to medium heat.

  2. While that begins to cook, grate 1/2 zucchini into a separate bowl to add later.

  3. Once the mixture comes to a boil, add the grated zucchini; if too dry, add more liquid.

  4. Turn the heat to low and add 1 scoop of vegan banana maple protein powder; note that the protein powder is essential.

  5. Add toppings such as raw creamy almond butter and raspberries.
