Vegan Protein Zoats with Apple and Granola

Ingredients

  • 1/2 cup riced cauliflower
  • 1/2 to 2/3 cup oats
  • 1 1/3 cup water or plant milk
  • 1/2 zucchini
  • 1 scoop Planta banana maple protein powder
  • 1 mini apple
  • raw creamy almond butter
  • grain free muesli

Preparation

  1. Add approximately 1/2 cup riced cauliflower into your pot with 1/2 to 2/3 cup oats and approximately 1 1/3 cup water or plant milk to heat on the stove on low to medium heat.

  2. While that begins to cook, grate 1/2 of a zucchini into a separate bowl to add later.

  3. Once the oats, riced cauliflower, and water come to a boil, add the grated zucchini; if the mixture is too dry, add more liquid.

  4. Turn the heat to low and add 1 scoop of Planta banana maple protein powder.

  5. Add your toppings: 1 mini chopped up apple, raw creamy almond butter, and grain free muesli for extra crunch.
