Vegan Protein Zoats with Almond Butter and Chocolate

Ingredients

  • 1/2 cup oats
  • 1 1/3 cups water or plant milk
  • 1/2 cup riced cauliflower (optional)
  • 1/2 zucchini
  • 1 scoop Planta vegan banana french toast protein powder
  • almond butter (from jar)
  • vegan mini dark chocolate chips

Preparation

  1. Add 1/2 cup oats, 1 1/3 cups water or plant milk, and optional 1/2 cup riced cauliflower to a pot and heat on medium heat.

  2. While the mixture begins to cook, grate 1/2 zucchini into a separate bowl.

  3. Once the oats, riced cauliflower, and water come to a boil, add the grated zucchini and add 1-2 tablespoons of plant milk if needed.

  4. Reduce heat to low and stir in 1 scoop of vegan protein powder.

  5. Stuff the mixture into an almost empty jar of almond butter and top with vegan mini dark chocolate chips.
