Vegan Protein Zoats with Melty Chocolate Topping

Ingredients

  • 1/2 cup oats
  • 1 1/3 cups water or plant milk
  • 1/2 cup riced cauliflower (optional)
  • 1/2 zucchini
  • 1-2 tablespoons plant milk (optional)
  • 1 scoop Planta vegan sprinkles cupcake protein powder
  • almost empty jar of Trader Joe's raw creamy almond butter
  • 1 vegan Hu Kitchen dark chocolate square

Preparation

  1. Add 1/2 cup oats, 1 1/3 cups water or plant milk, and optional 1/2 cup riced cauliflower into a pot and heat on the stove at medium heat.

  2. While that begins to cook, grate 1/2 of a zucchini into a separate bowl.

  3. Once the oats, riced cauliflower, and water come to a boil, add the grated zucchini (may need to add 1-2 tablespoons of plant milk).

  4. Turn the heat to low and add 1 scoop of Planta vegan sprinkles cupcake protein powder.

  5. Stuff the mixture into an almost empty jar of Trader Joe's raw creamy almond butter and top with a vegan Hu Kitchen dark chocolate square; let it melt.
