Vegan Protein Pumpkin Zoats

Ingredients

  • 1/2 cup oats
  • 1/2 cup grated cauliflower
  • 1 1/3 cup water or plant milk
  • 1 small zucchini
  • 1 scoop vegan peanut butter protein powder
  • Heaping spoonful pumpkin purée

Toppings

  • Mini vegan chocolate chips
  • Vegan chocolate hummus

Preparation

  1. Add 1/2 cup oats, 1/2 cup grated cauliflower, and 1 1/3 cup water or plant milk to the stove on medium heat.

  2. While that begins to cook, grate a small zucchini into a separate bowl.

  3. Once the oats come to a boil, add the grated zucchini.

  4. Turn the heat to low and add 1 scoop of vegan peanut butter protein powder after mixing in all base ingredients.

  5. Add a heaping spoonful of pumpkin purée to add extra pumpkin flavor and thicken the oats.

  6. Stuff the oats into an almost empty jar of raw creamy almond butter and top with mini vegan chocolate chips and vegan chocolate hummus.
