Vegan Protein Pumpkin Zoats
Ingredients
- 1/2 cup oats
- 1/2 cup grated cauliflower
- 1 1/3 cups water or plant milk
- 1 small zucchini
- 1 scoop Planta vegan banana French toast protein powder
- Heaping spoonful of pumpkin purée
- Almond butter
- Extra nut butter
Cranberry sauce
- Cranberries
- 4 tablespoons date or maple syrup
- Vanilla extract
- Cinnamon
Preparation
Add 1/2 cup oats, 1/2 cup grated cauliflower, and 1 1/3 cups water or plant milk to the stove on medium heat.
While that begins to cook, grate a small zucchini into a separate bowl.
Once the oats come to a boil, add the grated zucchini.
Turn the heat to low and add 1 scoop of Planta vegan banana French toast protein powder.
Add a heaping spoonful of pumpkin purée to add extra pumpkin flavor and thicken the oats.
Stuff the oats creation into an almost empty jar of almond butter, add homemade cranberry sauce, and extra nut butter.
Cranberry sauce
Boil the cranberries to soften.
Strain the berries then place them back in the pot on low heat.
Add 4 tablespoons of date or maple syrup, vanilla extract, and cinnamon to taste.
Mash and enjoy.
