Protein Zucchini Oatmeal Bowl
Ingredients
- 1 cup Instant/Quick or Rolled Oats (100g)
- 1 medium Zucchini (1 cup Finely Shredded, 176g)
- 1 3/4 cup Water
- 1 scoop Protein Powder ( 1/4 cup, 30g) @questnutrition
- 1/4 tsp or 1 packet Stevia Sweetener (1g, = 2 tsp Sugar, Optional)
- Pinch of Salt
Preparation
Finely shred zucchini using a large-hole grater or food processor and squeeze out as much moisture as possible.
Whisk together all ingredients in a saucepan over medium heat and cook uncovered for 2-3 minutes (Instant) or 8-10 minutes (Rolled), stirring occasionally.
Transfer to a bowl, add protein powder and sweetener if using, and fold.
