Protein Zucchini Oatmeal Bowl

Ingredients

  • 1 cup Instant/Quick or Rolled Oats (100g)
  • 1 medium Zucchini (1 cup Finely Shredded, 176g)
  • 1 3/4 cup Water
  • 1 scoop Protein Powder ( 1/4 cup, 30g) @questnutrition
  • 1/4 tsp or 1 packet Stevia Sweetener (1g, = 2 tsp Sugar, Optional)
  • Pinch of Salt

Preparation

  1. Finely shred zucchini using a large-hole grater or food processor and squeeze out as much moisture as possible.

  2. Whisk together all ingredients in a saucepan over medium heat and cook uncovered for 2-3 minutes (Instant) or 8-10 minutes (Rolled), stirring occasionally.

  3. Transfer to a bowl, add protein powder and sweetener if using, and fold.

  4. Serve hot nuts, @dangfoods coconut chips and @lilys_sweets chocolate.
