Vegan Chocolate Chip Protein Pancakes

Ingredients

  • 1 banana (mashed)
  • 2 tablespoons ground flaxseed
  • 1/2 cup oat flour
  • 2 scoops vegan pumpkin spice protein powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • ~2 cups almond milk or water

Additions

  • Chocolate chips

Toppings

  • Coconut flakes
  • Almond butter

Preparation

  1. Mash the banana.

  2. In a bowl, combine all ingredients except chocolate chips, almond milk, and toppings to form a batter, adjusting almond milk for desired consistency.

  3. Heat a skillet or griddle over medium heat and lightly grease if necessary.

  4. Pour batter onto the skillet to form pancakes and add chocolate chips to each pancake while cooking.

  5. Cook until bubbles form on the surface, then flip and cook the other side until golden.

  6. Serve the pancakes topped with coconut flakes and almond butter.
