Vegan Pumpkin Spice Oats

Ingredients

  • 2/3 cup oats
  • 1 1/4 cups water or cashew milk
  • 1/2 zucchini (grated)
  • 1/4 cup pumpkin purée
  • 1/2 scoop High Performance Nutrition vegan pumpkin spice latte protein powder

Toppings

  • strawberries
  • blueberry hemp granola
  • almond butter

Preparation

  1. Combine oats, water or cashew milk, grated zucchini, pumpkin purée, and protein powder in a pot.

  2. Cook over medium heat, stirring occasionally, until thickened and oats are soft, about 5-10 minutes.

  3. Top with strawberries, blueberry hemp granola, and almond butter.
