Vegan Pumpkin Spice Oats
Ingredients
- 2/3 cup oats
- 1 1/4 cups water or cashew milk
- 1/2 zucchini (grated)
- 1/4 cup pumpkin purée
- 1/2 scoop High Performance Nutrition vegan pumpkin spice latte protein powder
Toppings
- strawberries
- blueberry hemp granola
- almond butter
Preparation
Combine oats, water or cashew milk, grated zucchini, pumpkin purée, and protein powder in a pot.
Cook over medium heat, stirring occasionally, until thickened and oats are soft, about 5-10 minutes.
Top with strawberries, blueberry hemp granola, and almond butter.
