Vegan Pumpkin Oats Breakfast
Ingredients
- 2/3 cup oats
- 1/2 zucchini (grated)
- 1 1/3 cup water or plant milk
- 1/4 cup pumpkin purée
- 1/2 scoop vegan pumpkin spice protein powder
Toppings
- almond butter
- hemp hearts
- raspberries
- vegan mint chocolate fudge
Preparation
Grate the zucchini.
In a pot, combine all ingredients except toppings and cook over medium heat until oats are soft and mixture is creamy, about 5-10 minutes.
Top with almond butter, hemp hearts, raspberries, and vegan mint chocolate fudge.
