Vegan Pumpkin Oats Breakfast

Ingredients

  • 2/3 cup oats
  • 1/2 zucchini (grated)
  • 1 1/3 cup water or plant milk
  • 1/4 cup pumpkin purée
  • 1/2 scoop vegan pumpkin spice protein powder

Toppings

  • almond butter
  • hemp hearts
  • raspberries
  • vegan mint chocolate fudge

Preparation

  1. Grate the zucchini.

  2. In a pot, combine all ingredients except toppings and cook over medium heat until oats are soft and mixture is creamy, about 5-10 minutes.

  3. Top with almond butter, hemp hearts, raspberries, and vegan mint chocolate fudge.
