Vegan Banana Maple Protein Oatmeal

Ingredients

  • 1/2 cup oats
  • 1/2 grated zucchini
  • 1/4 cup pumpkin purée
  • 1/2 scoop vegan banana maple French toast protein powder
  • 1 cup water or plant milk

Toppings

  • strawberries
  • coconut flakes
  • hemp hearts
  • raw creamy almond butter

Preparation

  1. Combine all base ingredients in a saucepan.

  2. Cook over medium heat, stirring occasionally, until creamy and thickened, about 5-10 minutes.

  3. Transfer to a bowl and add toppings.
