Vegan Banana Maple French Toast Zucchini Oats
Ingredients
- 2/3 cup oats
- 1 1/3 cup water or plant milk
- optional 1/2 cup riced cauliflower
- 1/2 zucchini
- 1 scoop vegan banana maple French toast protein powder
- strawberries (topping)
- almond butter (topping)
- hemp seeds (topping)
Preparation
Add 2/3 cup oats, 1 1/3 cup water or plant milk, and optional 1/2 cup riced cauliflower to a pot and heat on medium heat. Use a 1:2 oat to liquid ratio and adjust amounts for desired carbs.
While the mixture begins to cook, grate 1/2 zucchini into a separate bowl.
Once the oats mixture comes to a boil, add the grated zucchini.
Reduce heat to low and stir in 1 scoop of vegan banana maple French toast protein powder.
Add desired toppings such as strawberries, almond butter, and hemp seeds, then enjoy.
Note: Adding zucchini and cauliflower may seem unusual, but they are undetectable with the protein flavoring, help increase vegetable intake, and boost volume without adding calories or macros.
