Vegan Cauliflower and Zucchini Oats

Ingredients

  • 2/3 cup oats
  • 1/2 zucchini (grated)
  • 1/2 cup riced cauliflower
  • 3/4 scoop vegan banana maple French toast protein powder
  • 1 cup water or plant milk

Toppings

  • strawberries
  • hemp seeds
  • cacao nibs
  • lightly sweetened chickpea butter

Preparation

  1. Grate the zucchini and rice the cauliflower if not already prepared

  2. Combine oats, grated zucchini, riced cauliflower, protein powder, and water or plant milk in a pot or bowl

  3. Cook the mixture on the stove or in the microwave until thickened and creamy, about 5-10 minutes

  4. Add toppings such as strawberries, hemp seeds, cacao nibs, and chickpea butter after cooking
