Easy Homemade Blueberry Pancakes

Ingredients

  • 1/4 cup organic buckwheat flour
  • 1/4 cup Bob's Red Mill paleo flour
  • 1 egg
  • 1 scoop of High Performance Nutrition vegan blueberry scone protein powder
  • 1/2 teaspoon baking powder
  • Water to consistency (approximately 1/2 cup)

Preparation

  1. Mix all ingredients together to form a batter

  2. Refrigerate the batter for 5 minutes to let it set

  3. Add blueberries to the batter

  4. Cook the batter on a hot griddle or pan until golden brown

  5. Top with extra blueberries and almond butter
