Homemade Fluffy Banana Pancakes
Ingredients
- 3 eggs
- 1 mashed banana
- 1.5 cups almond flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
Toppings
- 0.5 caramelized banana
- maple syrup
Preparation
Whisk 3 eggs in a bowl.
Add the mashed banana, almond flour, baking powder, vanilla extract, and cinnamon to the bowl and mix until well combined.
Heat a skillet or griddle over medium heat and lightly grease if necessary.
Pour batter onto the skillet to form small pancakes.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Slice half a banana and caramelize it in a pan with butter and sugar until golden.
Serve the pancakes topped with the caramelized banana and maple syrup.
