Fluffy Paleo Banana Almond Pancakes

Ingredients

  • 3 eggs
  • 1 ripe banana, mashed
  • 1 1/2 cups almond flour
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • Optional: nuts, blueberries, chocolate chips
  • Oil or butter for cooking
  • Toppings: butter, pure maple syrup

Preparation

  1. Heat a skillet over medium-low heat.

  2. In a bowl, whisk together 3 eggs.

  3. Mash a ripe banana and add it to the whisked eggs.

  4. Incorporate 1 1/2 cups of almond flour into the mixture.

  5. Stir in 1 tsp of cinnamon and 1 tsp of vanilla extract.

  6. Add 1 1/2 tsp of baking powder to the mixture and thoroughly combine all the ingredients.

  7. If desired, fold in some chopped nuts, blueberries, or chocolate chips to the batter.

  8. Grease the skillet with a little oil or butter.

  9. Spoon small portions of the batter onto the skillet to make mini pancakes (easier to flip).

  10. Cook the pancakes for about 2 minutes on the first side, then carefully flip them and cook for an additional 1-2 minutes on the other side until they're golden brown and cooked through.

  11. Repeat the cooking process until you've used all the batter. This should make around 8 mini pancakes.

  12. Serve the pancakes topped with butter and drizzle with pure maple syrup.
