Blueberry Protein Pancakes with Almond Butter
Ingredients
- 1/3 cup organic buckwheat flour
- 1 egg
- 1 scoop of High Performance Nutrition vegan blueberry scone protein powder
- 1/4 cup unsweetened applesauce
- 2 tablespoons organic coconut flour
- 1/2 teaspoon baking powder
- Cinnamon
- Water to consistency (about 1/2 cup)
Additions
- Blueberries
- Extra blueberries
- Trader Joe's mixed nut almond butter
- Walden Farms sugar-free pancake syrup
Preparation
Refrigerate the batter for 5 minutes to let it set.
Add blueberries to the batter.
Top with extra blueberries, mixed nut almond butter, and sugar-free pancake syrup.
