Blueberry Protein Pancakes with Almond Butter

Ingredients

  • 1/3 cup organic buckwheat flour
  • 1 egg
  • 1 scoop of High Performance Nutrition vegan blueberry scone protein powder
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons organic coconut flour
  • 1/2 teaspoon baking powder
  • Cinnamon
  • Water to consistency (about 1/2 cup)

Additions

  • Blueberries
  • Extra blueberries
  • Trader Joe's mixed nut almond butter
  • Walden Farms sugar-free pancake syrup

Preparation

  1. Refrigerate the batter for 5 minutes to let it set.

  2. Add blueberries to the batter.

  3. Top with extra blueberries, mixed nut almond butter, and sugar-free pancake syrup.
