Blueberry Pancakes with Banana and Protein
Ingredients
- 1 egg
- 1 small banana (mashed)
- 1 scoop (25g) vanilla protein powder
- 1 heaped tbsp oat flour
- 1 tsp baking powder
- 1 tbsp olive oil
- A handful of blueberries
Toppings
- Nuts
- Greek yoghurt
- Frozen raspberries
Preparation
Whisk the egg and mashed banana together then stir in the protein powder, oat flour and baking powder.
Heat a pan with some olive oil over a medium to high heat and cook the pancakes 2 at a time.
Once you’ve got the mixture on the pan, plant some blueberries in the middle, and flip when you see tiny bubbles start to form.
Once cooked on both sides, serve up with your toppings and enjoy.
