Mini Banana Bread Pancakes

Ingredients

  • 1 ripe banana
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • blue spirulina powder (optional)

Garnishes

  • blueberries
  • nut butter
  • yoghurt

Preparation

  1. Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing with all ingredients except the garnishes.

  2. Heat a non-stick pan and optionally add a small amount of coconut oil.

  3. Pour the batter using a teaspoon to form mini pancakes.

  4. Cook each side until they turn golden-brown.

  5. Optionally, mix a small amount of blue spirulina powder into a portion of the batter to make blue pancakes.

  6. After cooking the mini pancakes, top them with blueberries and yoghurt.

  7. Drizzle nut butter over the topped pancakes.
